Fatty Assay by Barium Ion Complexometry (Penetapan Kadar Lemak secara Kompleksometri Menggunakan Larutan Baku Barium (Ba2+)
A study had been performed to develop a complexometic method for determination of fat. The present method was also compared with that of Bligh method and other complexometry using some indicators. The results of precision, accuracy, and recovery were statistically compared. The complexometric methods done by titrating the excees of Ba2+ standard solution as alkaline hydrolize sample, using standard of EDTA solution and adding some of indicators i.e : Murexide, Eriochrome Black T, and Eriochrome Black T added with salt of MgKEDTA. The complexometric method with Eirochrome Black T added with salt of MgKEDTA had precision, accuracy and recovery was better than the other methods. The present method was succesfully applied in the assay of fat in foods.
